First impression was a bit frightening. That is a very sharp very curved and very exposed blade, quite different than a regular kitchen knife. We got over that quickly. This knife is a must have in the kitchen. Sure we cut pizza with it, wouldn't you? and it does that well, but what I didn't expect was how easy it is to chop and mince with this thing. I'd recommend a decent sized cutting board, at least for the amount of stuff that I'm choping and mincing. It is easy to hold, easy to handle and control, and presents none of the danger we originally thought it might. The only time you need to keep your wits about you, well more than one alwasy does with a sharp knife, is putting the blade protector back on. Of course, when washing, if you aren't using a brush and insist on a cloth, keep the blad pointed away from you, and wipe from the closest edge out across the sharp edge, never across the sharp edge - if you prize your finger tips :-) Have used this now for a long time, it stays sharp, is easy to use, is stable and easily managed with both hands (remember BOTH hands). We are never going back to mincing with a broad blade, this just does such a better and faster job. p.s. yes, we do use the stainless steel soap bar. It's a funny thing, works pretty well for smelly hands. When we are messing with fish, and have that fishy smell on them, a rinse in the sink with this bar and the smell is taken care of. Of course, it doesn't replace soap for actually washing and cleaning one's hands, but to avoid drying out one's hands and still being able to continue working in the kitchen without fishy smelling hands, this does the trick. It was a nice "gift" along with the awesome knife.
