The description states "not dimmable". If I have led light strips that are rated dimmable, why won't this connector work?

It is the led strip lights that are dimmable or non-dimmable. The connectors just connect the light strips and wires.

Why does it say NON-Waterproof, but then references Waterproof in Features?
