I need honest opinions on flavor, I need a shelf stable substitute for heavy cream, how does this taste compared to fresh?

This is just awful. It does not taste like cream or even milk. Don't bother. Heavy cream will last a pretty long time in the fridge and you can always buy the smallest container but this stuff is a waste of time and money and it says a lot that the seller won't take it back if you're unhappy with it.

Is this organic or grass fed cream?

Caution: If it does not have the official organic seal on the package, or the words from 100% grass fed cows, assume it is not either.  I'd take one that says 100% grass fed over organic.  Also, as you probably know, a lot of times, family  farmers can not afford to do "everything right" to pass the stringent organic test meaning trying to control the air quality over their space as well as controlling other farmer's/company's land around them, however, they do everything right on their own farms.  They put out quality products anyway.  Just my 2 cents.

If you make the whole bag as a single batch of cream, then mix it with 9-3/8 cups of water. Then there’s the added volume of the powder which at 1lb is almost 2 cups because volume of dry powder can’t be counted as liquid weight. So total of cream made from this is just a touch over 11 cups.

will this blend directly into coffee from dry form ?

I blend the heavy cream powder with a milk frother in a small amount of liquid (coffee, tea, hot water) before then adding the remaining liquid, and it works just fine.
