If your question is about collapsing it for storage, yes it comes apart and folds away flat for storage purposes. If your question is about the racks collapsing if you put something heavy on them, it seems pretty sturdy, especially if you used all four corner supports. Something like pies should be fine. I've only used it for cookies myself.

My cupcake PAN is 7" x 10 1/4" and 2 of them fit on my rack with more room to spare. I'm positive of at least 48 cupcakes, but I'm sure that it will hold more when they are out of the pan. My pan makes cupcakes that are just a little under 3" each. Hope this helps.

yes, you can use them individual. The bottom one has the "stands" but they can be folded down.
