It's not hard to tell true cinnamon from cassia if you buy the quills and grind as you need. Cinnamon is a lighter colour with much thinner sheets, and breaks and grinds easily. Cassia is darker and thicker, difficult to break, and harder to grind. You should always buy whole and grind it yourself as the flavour and health properties are much better.
