Toast and grind before use
These are NOT used like regular peppercorns. You want to measure out however much you're planning on using in the dish you are preparing. Remove any really dark seeds, you only want the husks. The seeds are bitter, and don't add flavor or numbing. Put the husks in a dry skillet on medium heat and toast for about five minutes. Then grind in a spice grinder or mortar and pestle. NOW your Szechuan peppercorn is ready for use.

Very nice, flavorful and pungent Szechuan Peppercorns
These are great!, They're flavorful, and pungent. I always wondered what Szechuan Peppercorns tasted like, and watching the cooking channels on YouTube, they always describe it as a “Tingling, Slightly Numbing Sensation". After finally getting to taste these in a soup, they're right, it's a tingling, and slightly numbing sensation, like having Menthol, Eucalyptus, or Vick's VAP-o-Rub in your mouth. I DON'T MEAN THAT IN A BAD WAY, that's just the closest accurate description of it I can muster. I like it, and will use more in other dishes.

I was able to make ine if the best homemade sauces I have ever made in my life using these peopercorns. Well worth it. Very distinct flavor

Special spice.
So hard to.find this secret spice. We live in between 4 huge serious Asian supermarkets; none carry it ! Seek out a dish using this spice ... Not at Panda Express .... are small family run places in every town...Your taste buds will be amazed. Then pick up a jar here & wow your friends.... Very gentle heat and oddly fruity.

"Ma" sensation weak.
Not very good quality. The strength of peppercorns weak so needed to use a much larger quantity than what recipe called for to add any "ma" sensation.
