Can these connectors be used with Cat5e cables ?

Yes. In fact Cat 5e is thinner than 6 and a lot easier to work with.

How does the cable shielding connect to the plug?

When you crimp the end, the plug squeezes down on to the sheath of the cable to secure it. You will need a crimping tool which can do pass throughs.

Do i need a different cutting tool for these rj45 connector or will the standard rj45 crimping tool work

A standard tool will crimp but a specialist tool will cut the excess AND crimp. You can cut the excess off with a stanley knife and crim with a regular tool if you don't want to buy a special tool for the job.

Will these work with external grade cat 6a cable?

If the cable is the same thickness as the standard ! Yes it dose. Otherwise you should use the covering sleeve to the back of RJ45
