Will these work work a 56v 1500 watt ebike battery?

Based on 1500W/56V=27A, you are within the current rating of the connector. You will need to be VERY comfortable with your soldering skills. Given the amount of stored energy, I would be very cautious, and stick with the OEMs specified connector.

could i use these for speaker wires

Yes, it is certainly possible, though perhaps not ideal. These plug and click quite firmly, so if you wanted to move your speakers often, it might be a bit much. Also, these are designed for heavier wires (12ga, 10ga, 8ga), so smaller speaker wire might be a little difficult to solder into such a relatively ‘large’ fitting. Pouring a lot of extra solder into the copper fitting to secure a small wire risks melting the plastic part of the plug. Those factors considered, another lighter duty connector might work a little better. However, yes, these could definitely be made to work just fine, too.

Will these with my other xt60 plugs?

These will work with both male or female xt60 plugs

Will these work as a "quick connect" for a "mains heated bed" on a 3D Printer? Will be used on a normal 120v circuit and used to power a 740wt bed.

According to specs, XT60 and XT60H connectors are rated for 500volts and 60 amps (continuous), and able to do more intermittently. Your 740 watt load at 120v should only draw about 6 amps, after the initial inrush, so if installed correctly, the connector should work for this application. YMMV.
