I emailed Red Star asking about if they had a gluten-free, corn-free yeast and this was the reply:"Thank you for writing.  You've come to the right place!The Red Star Active Dry Yeast that is sold in the small 1/4 oz. packets, three packets to a strip.  This product is our all-natural, pure yeast, grown on cane molasses and without any other ingredients added.  You should find this product at Fred Meyer, Albertsons and Safeway.Please note, any Red Star Active Dry Yeast that is in a jar or a larger, 1# or 2# package will contain sorbitan monostearate, an emulsifier that protects the yeast once the package is opened.  It is an essential ingredient whenever the yeast is in a package meant for multiple uses. The single-use, 1/4 oz. all natural active dry yeast packets do not contain the ingredient.  Sorbitan monostearate is often derived from corn.  People with corn allergies will avoid the yeast products that contain the ingredient.  We ALWAYS declare the sorbitan monostearate in the ingredient statement on the label or package if it is present in the yeast product."A few weeks ago I discovered I'm deathly allergic to baking soda and was starting to try and find a way to live without leavened breads of any sort, but had heard one of the Red Star yeasts was claimed to be safe by other corn-free individuals. Yet none of them seemed to have any info directly from the company. So I wrote them. I am going to buy some of the yeast tomorrow that they specified and try it out to see if I get a reaction (happens within 6 hours of me eating wheat/gluten or corn.) If I can eat it safely I'll be posting this info on my food blog I'm working on (Whiskly Mittens on Wordpress) so hopefully I'll have some happy info to post. It has been a huge shift in my life the last 6 months where eating dairy, wheat/gluten, and corn suddenly was no longer possible without extreme pain. It has been a real challenge and it can get frustrating when the info we need is not forthcoming.
