No need to use right away. It should be kept at room temperature for up to one year. The package may or may not expand slightly but this is ok, just a bit of co2 from additional fermentation.

First try and I've got mold on the surface after 5 days, a bit of a bad smell. Has something gone wrong?

Yes, somethings gone wrong if there’s mould and a bad smell. Did the scoby come in contact with metal? Like a spoon?? Or was it in strong sunlight? Dark areas are better. You could try and gently rinse the scoby in filtered water (or boiled and cooled) then try a new batch?
