What is the voltage? Is it 110v and 210v?

The one I have is 110. Don't know if they make a 220. I'll tell you though its a great deal for the price.

Are there really only three temperature settings, or are there settings in between such as, half way between M and H?

I actually always use half way between M and H. Just the right temperature for making very thin Chinese wraps for eggs and other fillings.

does the temperature keep uniform and stable as you fix with the knob during all the time you are doing your crepes? Thank you

Temperature is uniform, but I do not understand your question regarding “fix with the knob during all the time you are doing your crepes.” I use the temperature that works best, and I do not adjust.
