10.25 Inch Swiss Classic Slicing Knife with Granton Blade, Black (6.8223.25US1)

I've purchased several of these. I've kept some and given the others to the other cooks in my extended family. I've never been disappointed. These blades slice through brisket, pork loins and hams like they were butter. I have both the 10" and the 12" blades. The 10" work best for me on the types of meats I slice most often: briskets, pork loins and medium-sized hams. The 12" is good for larger meats such as really big hams and larger turkeys. I treat them carefully, always trying to avoid dinging them against hard objects. I hand wash them and keep their blades covered when they are not in use. I recommend the Messermeister edge guards. These are good quality knives and I highly recommend them.

Bought this knife to cut a smoked brisket on 4th of July and was not disappointed. This knife cut through the brisket just like it was a stick of butter. There was no need for sawing or hacking. I got perfect slices and even thickness throughout the brisket. The knife maintains it's edge without sharpening for a long time as well.

I bought this knife in two lengths, and I highly recommend them both. I use the longer one for cutting homemade pizza, sheet cakes, and other large things. The slightly smaller one is great for carving meat. These knives are sharp and cut like a breeze. The handles are very comfortable in the hand and clean up very easily.

I bought this specifically for one reason, to slice through turkey and large meats. It did that job wonderfully. If you've tried carving through turkey or any large meats routinely, you know how much difference having a good knife makes. So I bought this knowing it's a specialty knife but well Worth it. I carved a turkey with ease, just for the time saved and hand fatigue that it cut it is completely worth it. It's a sizable knife so it's not really meant for daily use, think of a bread knife but for meat. That's why it's not 5 stars all around outside a few uses a year personally it's going to stay in the block but I will be sure glad to have it when it's needed.

I really appreciate the quality and value of Victorinox knives, I bought this one because sometimes the 12 inch slicer is just to long and it has now become my go to item for most larger cuts of meat etc. Well made, razor sharp and easy to work with. Holds an edge reasonably well too.

Have a 12" Victorinox, but it is a bit unwieldy-this is nicer size for all but the biggest roasts. Very sharp slicing knife, and re-sharpens well. Buy an edge guard, as blade is fairly thin and will damage if thrown unprotected in drawer, not to mention dangerously sharp. Good quality for the price.

Excited about my new Victorinoc Swiss Classic slicing knife. Only had it about a week and have not used it yet but am ready for slicing barbecue or roast beef, which ever is cooked; I am prepared! I decided on this knife because it is not quite as long as others I looked at for home use, has a handle that is non-slip and a great blade! Talked to a meatcutter about it before ordering and he told me that was the "brand" of knife he uses in his profession!

Were you ever in charge of carving that beautiful turkey on Christmas day, or a delicious Thanksgiving roast, and all you had was a 5" Santoku knife? Yeah.. That's been me. Like every year. Don't be like me. I don't know why it took me 33 years to finally throw down and buy a proper carving knife but let me tell you, this thing carves beautifully. I hope that I will no longer embarrass myself in front of guests by struggling my way through a piece of meat with the wrong kind of knife. With it's 10" blade and razor sharp edge, I quickly put this knife to work by slicing up a smoked brisket. It was able to glide through the meat with absolute ease, and gave me great control over the thickness of the slices. No more sawing away or hacking up nicely cooked pieces of meat with knives not fit for the job. The price is right at under $100 for a well-made carving knife, and you're getting Swiss-made quality here. I am hoping that it lasts a lifetime by taking good care of it. I do wish that Victorinox included a sheath as they do with some of their other knives, but, just be careful with storing it so you don't unintentionally dull the edge or damage the blade. Overall I am super impressed with this knife. If you foresee yourself on carving duty at any point in the future, don't make my mistake of using a puny little knife meant for cutting the crusts off of sandwiches or something like that. Get a true carving knife like this. You will surely impress your guests and probably yourself at the same time.

This is an awesome meat cutting knife, very durable. I order the 10.25" version and actually ended up receiving 12" version, but no complaints here on that. I use this often to cut ribs, roasts, etc. It keeps a sharp edge really well.
