Too sour
Too sour for me. Smells great, but every bite has a almost vinegary twing to it. I tried roasting them, it helped, but the sour was still there

A Robust Cacao with Classic Flavor
Ecuadorian cacao has a very unique, distinctive flavor compared to all other cacao origins in the world. Much like an olive oil's quality can be partly determined by the sensory experience of bitterness and peppery characteristics (indicating high levels of phenolics), this cacao powder is both "robust" (ie, very bitter, which would indicate high levels of polyphenols), but also with the classic Ecuadorian cacao flavor to balance it out. If you consume cacao for it's health benefits, this would seem to be a good one for polyphenols. If you prefer to bake pastries, the bitterness will be masked by the addition of flour and sugar, leaving the classic Ecuadorian chocolate flavor.
