It doesn't state whether this is soft, firm, or extra-firm? which is it and are the organic options available in extra-firm and soft?

This product is soft and perfect for making pudding, salad dressing and works well in smoothies. Recently the non-soft tofu is not available in firm or extra-firm. I hope they bring it back!

Can I use this in a cold breakfast smoothie?

I have never done it before but it will be okay. This products are really good!

Is this soft or firm silken organic tofu? All the other silken tofu by Mori Nu notes it on the label, but not this organic silken tofu.

Can we use this organic tofu for creamy dressings and puddings?

I use it all the time for dressings and sauces. I blend the tofu and use by itself, or I blend the tofu with 1/2 cup salad oil to make something more like creamy mayonnaise. By itself or with oil, it is great for creamed sauces. Blends in under a minute. Add seasonings to taste. It adapts well to seasoning.
