What is the steel thickness, apparently 6.35 mm or 1/4 inch thick steel is best,

It's 1.5mm on the drum. It feels reasonably solid/ sturdy and is okay to move around at around 27kg. If it was 6.35mm thick it would be too heavy to move.

Can you smoke a side of salmon

i found the Azuma a bit flimsy compared to the Braunfels i had previously but it does the job. I have smoked the fillets from 14Lb trout in the Azuma with really good results. The smoking compartment is 24 inches long so if yours are around that size or smaller, i feel you will have no problem.
