A quart. Then you save the other packet. You use a tablespoon of the buttermilk for the next batch.

Can this be used with raw milk?

Yes, we make it with raw whole milk. Comes out great. Instructions say to heat milk to 190F first...cool yo room temp then add the starter...leave out st room temp for 24 hrs...then ready to use
