does the variable power knob instantaneously control the motor speed or is there a lag?

I don't notice a lag at all. It take a moment to munch everything up at low speed, then I open it up to full speed for no more than 20 to 30 seconds. Plenty of time to blend everything smooth.

will this model crush/chop icecubes for frozen bar drinks?

Yes. It crushed the ice cubes and frozen berries for me with no problem.

How does this handle raw carrots and citrus peels? Does it make them smooth, or do they end up being little chunks like in the Ninja?

I put in raw carrots and it blended them very smooth without even breaking a sweat. I am drinking a carrot, apple, pear, and pineapple smoothly and the carrots are so blended that they are not even gritty or powdery. They seem perfectly liquified (the pears and apples have a very slight grit to them, but not the carrots). I am going to be trying to do some lemon rinds and will hopefully report here how they work when I do...
