Does this lather well? Is the consistency supposed to be somewhat watery?

I wash my hair once a week. My hair is long, thick and silver. I apply mainly to the scalp. It offers little lather but cleans very well. Yes, the consistency is watery rather than thick.I apply the conditioner to the scalp and ends of hair as well. I have an extremely sensitive scalp and find this product offers great results on many levels. I hope this helped.

Will this make your hair greasy like the amla shampoo?

No, this is similar to the weight of the former Bamboo formulation. It's much more lightweight than the Amla, which my fine hair cannot handle, either.
