How are the rings joined?

The rings are not joined. The bend in the wire is fairly tight but it is not welded or riveted.

Would I be able to take the chain apart and customize?

Yes you can. The rings are not soldered.

What size head will this fit? Ie hat size comparison?

i wear a large to extra large hat and it fits me find. i unlinked the front. i dont see it being to small for anybody!

If I let someone strike me with a katana would this protect me?

It’s made of non-riveted Aluminum rings so while a katana slash might be defeated a thrust would likely go through. Also the mail shirt was worn over a padded coat that soaked up the impact- your proposed experiment would likely feel and affect you skin to be hit with a length or rebar. This is a costume item!
