The blade is made of an advanced ceramic called zirconium oxide that is much harder than steel, and second in hardness to only diamond. Ceramic blanks are produced by dry pressing zirconia powder and subjecting the blanks through an advanced heating process called, sintering. The ceramic blanks are then sharpened and honed to a razor sharp edge and attached to the knife handle. This results in an extremely hard blade that maintains its edge approximately 10-15 times longer than steel knives. That means your ceramic knives can be used longer without resharpening. Ceramic is also non-reactive, which means ceramic knives will not rust and are easy to clean. Because of their resistance to strong oils and acids, they won’t absorb flavors or odors from foods; which won’t leave any after-taste residue on foods that you slice. It also keeps fruit and vegetables from browning as quickly. STEEL KNIVES VS CERAMIC KNIVES Unlike ceramic blades, steel blades are porous, and they can sometimes leave behind an after-taste or residue on the food you’re cutting. And due to its softer material, steel blades lose their edge much quicker than a ceramic blade, and they need to be re-sharpened often. Properly cleaning steel knives to prevent rust is a must as well, as they will corrode eventually, unlike ceramic knives. Because you can’t use ceramic knives to chop or cut through bones, cheeses and other hard foods, ceramic knives will never fully replace the steel knife in the kitchen. CUT FROZEN OR HARD FOODS: Do not use on frozen foods or hard foods (such as cheeses, carrots, melons, etc.) STRIKE HARD SURFACES: Do not strike hard surfaces with the ceramic blade (either sideways to crush garlic or blade-down to chop bones) or drop the knife on the floor as the blade may break. SHARPENING YOUR CERAMIC KNIFE If properly cared for, ceramic knives can go years without re-sharpening. However eventually the ceramic blade will develop micro nicks that will make the blade feel dull, and can be re-sharpened using a diamond sharpening wheel. First one that actually is worth having
I only gave it four stars because I know about the high end ones and this isn't that.Still I've been fascinated by ceramic knives for a while. I've bought several online thru the chinese suppliers that eBay sellers like to get their stock from - sure I saved even more but I got what I paid for. I had always been quietly disappointed by the knives I had gotten before and toyed with the idea of trying the Shenzehen ones for months. Finally I decided to get it for myself for my holiday present. I'm glad I did.Finally the wicked sharpness I'd anticipated arrived with this knife. Its not exactly the best designed knife I ever had but its comfortable to use and flies thru anything I use it on. Naturally one must remain aware these things can & do break if improperly used but that aspect is really easy to follow.I highly recommend the Shenzhen knives and have already started to use them as my standard gift to give friends & family, given it s affordable price and great utility in the kitchen.I'm still yet to handle one of the really expensive ones but this is a great one

EASY SLICING?
This is great knive. Cuts perfectly and is a perfect size

Impressive.
Purchased after hearing others speak of ceramic knives, so far so good. Seems to hold its edge, and I would have to say the best use by far is cutting raw chicken. Slices through without an issue.They do not recommend placing this knife in a dish washer, as it may get bounced around and chip. Not an issue as it washes off easily.

Very sharp but breakable if care is not taken.
Very sharp and works well. Chipped the end easily but that's normal for ceramic knive. Makes fast work out of tomatoes.

Blade too long for ceramic
Bought this as a gift but regretted the choice after I purchased myself a ceramic knife at TJ Maxx with a shorter blade length. Other reviews and recommendations warn against certain pressures on the blade and it seems a shorter length is easier to avoid these with. The edge of my paring knife is a little buggered-up after a year of use but, it is still one of my sharpest and favorite knives to use. I did have a bit of staining to the blade with pasta sauces, beets and dark berries, so clean right away with these foods. Most of the staining has come out with Oxiclean soaks. Not sure if the recipient used this but I would worry I would break the blade if the wrong torque was applied.

razor sharp, and looks cool with its white blade. this is my favorite brand of knives! buy it often as a gift for my friends and family!

never have to sharpen
I am giving 3 stars as the tip has broke. But this knife was bought for my boyfriend as he doesn't cut much items but when he did he wasn't grabbing the right knife which was causing my knife set to get more dual faster. We have looked at more ceramic knifes but it a bigger set. But great starter knife.

Super Sharp!
I have a set of Ceramic knives, they are the only knife I reach for when cutting up fruit and vegetable! Super sharp and easy to maintain!
