Great beginning book
I really like the format of the book. the directions are easy, and the additional information in the front is very helpful for those who are new to cooking this type of recipe.

Simple and Delicious Recipes
I am the kind of cook that does not follow recipes religiously, but uses them to get ideas. This book is great because it has a large variety of recipes - and so simple that it's easy to just stick to the recipe. I love the little intro it has about the origins of these recipes, which come from all around the world.However, I was hoping that it would be more on the vegetarian side, but many recipes include meat. So while it gives me great ideas of what to do with my legumes, I will still need to purchase a separate book for vegetarian recipes.

Great recipes for healthier meals
I love the recipes in this cookbook and would highly recommend it to people who want to add healthier and higher fiber meals to their menu.

interesting
I like this book much better that the all bean recipies book I also ordered. I'm not sure my husband wouldappreciate the tofu recipes but there are so many more choices here than an all beans book!

Deceiving title
I assumed it was at the very least a vegetarian cookbook due to the title. It’s not. So I am dissapointed.

Beware Full of Meat Recipes
It is my own fault for assuming, but if you are a vegetarian looking for good tofu, beans and lentils recipes I would look somewhere else. So many of the recipes are meat, and all kinds of meat. The book is lovely, but not what I expected. The back cover is misleading too, it shows 2 or possibly 3 (again I am assuming on one of them), vegetarian cookbooks.

Wonderful recipes!
I always enjoy eating legumes (lentils, chick peas, black beans, etc) I love the health benefits of them, however I didn't eat them as often as I liked due to a lack of good recipes. So, I jumped at the opportunity to review 250 best beans, lentils & tofu recipes. This book combats the image that beans and lentils are difficult to cook by providing easy to make delicious recipes.Flipping through the recipe titles, my mouth began to water. (Insert recipe names). Looking through the recipes more closely, I noticed that they didn't call for extravagant, hard to find ingredients for the most part.The cookbook also features many full color photos of some of the recipes. It is printed on quality paper, that will stand up to the test of time and usage. The paperback copy I received, however, won't stay open to the page I want without breaking the spine.I did like that they have so many meatless recipes. Not that I oppose eating meat, but I think it is healthier to have a meatless meal now and then.One day, only having a short amount of time to prepare lunch, I tried the Chick Pea and soup. It was incredibly delicious. The rest of the family enjoyed the soup, too. In fact, My six-year-old demanded she have the rest in her lunch the next day.
