Do you have to dip the bird in 150 degree water bath before using the plucker?

Yes you would need to dunk the birds in hot water so the feathers will come off easily

How do you empty the feathers and water? I don't see a discharge chute in the photos.

There is a chute on the bottom as you spray water in while plucking it washes thru the chute into the bucket below. Then empty the bucket

How does the plucker do on upland game birds? Pheasants, chukars, huns, grouse, quail? Does anyone have experience with these fowl?

I’ve only used it for chickens, but it’s not very large. Smaller birds could become damaged by the agitation. However, if you were to get the right balance maybe. (ie our more birds in the tumbler to get a more even rotation.
