The jar shows 27~29 slices. That looks right. Each slice is about 1-1/2 inch long, or longer. Maybe 1/4" or so thick.

How long of a shelf life do they have once jar is open?

I’m not sure what they would say, but they’ve been open, in my fridge for over a year, and they are fine. Fresh, tastes good, not sour or bitter, not spoiled. I still use them.
