will these work to hold down a gazebo canopy for extra support?

Should work just fine. I have them holding down my aluminum greenhouse. It survived 80 mph winds with no issues. The longer the length the sweeter the hold.

Are these good for keeping my tent stable at the beach?

These are probably heavier duty than what I would use at the beach. They are also very HEAVY. Probably an overkill for the beach.
