How is it at”frying” vegetables? Are they crispy? Do you need to turn them in the middle of cooking? Has anyone tried the dehydrator?

I don't fry vegetables so I decline to answer with certainty. I do know that right below the power button there are 3 settings that allow you to choose the top, bottom, or both top and bottom heating elements. I suppose if you choose the top and bottom heaters, you won't have to stop half way to turn the veggies.

can heat & timer be set manual

Yes. To the far left of the power there are 4 settings: arrow down, thermometer, timer, arrow up. Tap the thermometer or timer, then either the up or down button until you arrive at the desired temperature or time.
