Fabulous Fully-Clad Stainless Cookware - an incredible value to boot
My, oh, my, this is a wonderful line of cookware. I've been an avid cook for over 40 years, and I've never owned a piece of cookware I've liked better. I'm only sorry I've waited so long to make this kind of investment. I've been admiring the All-Clad all stainless clad cookware for a long while, but I simply couldn't wrap my head, or my budget, around the cost of the pans. I'd cobbled together a collection of pans - some enameled cast iron, some Calphalon hard-adonized, some stainless steel pasta and stock pots, and some cheap non-stick skillets which I replaced with some frequency. I'd reached that point again, but instead of buying another non-stick skillet, I discovered this line of Cuisinart French Classic cookware. What an extraordinary value! The pans are fabulous. I've purchased the 12" skillet, the 8 & 10" smaller skillets, and the 2 qt saucepan. The pans are beautiful. They are heavy, but in a good way. The handles are comfortable and cool to hold (but the helper handle on the 12" skillet DOES get hot!). They heat so well and so evenly that you don't need, and shouldn't, use anything higher than medium heat. Allow the pan to heat up before you add the food. The foods develop a nice even browning, the "fond" as the French would say, better than any other pan I've ever owned. There are no hot spots. They cook beautifully on my new Frigidaire gas range. But one of the biggest surprises is how easy it is to care for them! Let the pan cool down, add warm water to soak a little while, and then take a scrub sponge with a bit of Dawn, or Bar Keepers Friend mild scouring powder, to the pan and the residue comes right off. I am amazed. And so very pleased. Yes, they are somewhat of an investment. But they are considerably less expensive than their counterparts at All-Clad. I've used some of those pans in friends' kitchens, and they come in almost an unlimited variety of shapes and sizes. But I would match these French Classic pans against any other any day. Oh, and they are MADE IN FRANCE! Well done, Cuisinart!!! Please expand the available pieces!

and good ones, and some of those teflon pans are ...
I wish I switched from Teflon coated pans years ago. I have either dealt with scratched 'non-stick' surfaces that don't work well, or replaced the pan so many times that it hurts to think about. I tried cheap ones, and good ones, and some of those teflon pans are good, especially for some things, but so fragile, and these tri-ply stainless are amazing! A little bit of oil seasoning on it, and it is nearly non-stick, easy to clean and near bullet proof. I can scrape, stir and mix without fear of wreaking another pan. The best part has to be the evenness of heating. I often wondered how I was so bad at cooking things after trying to hard to keep an even heat, keeping the pan in the center of an element, trying to find the ideal temperature, and still ended with hot spots, cold spots and frustration. This pan cured all of it. I was doing the right things with the wrong tools. I have told everyone I know to throw out those cheap and convenient pans and get a real set of cookware, like these. I can't recommend these French classics enough. They are very well made, they look like I could use them my entire life, and I hope to, and while they are far from cheap, they are not that expensive, and completely worth it. If you are on the fence about which stainless set to buy I would go with these. I have read that the top layer of steel is thicker and stronger with the French Classic line. I can't comment or compare as all I own are of this line. I am incredibly happy though, and will be buying more to fill out my cabinet. If you are on the fence about making a switch from cheap or non-stick pans, buy any of the tri-ply stainless pans! You will see the difference the first time you use them. (Oh, and pick up a cast iron pan too)

The sides are very slanted so the base of the frying pan is a full 2 inches smaller than any of my other frying pan that is 10 inch. It is lightweight and NOT as heavy as I expected or wanted. It is worth about half as much as this frying pan cost. I expected the base to be NOTICEABLY thicker...and it is NOT. Moreover, the handle is heavy in proportion to the weight of the pan, so it doesn't even sit flat when it is empty...so it is tippy.

Excelente sartén, de lo mejor muy bien hecha y muy resistente y lo mejor que no es china está hecha en Francia. No volveré a comprar sartenes de teflon

I bought the 8" & 10" pans. They worked perfectly the very first time and after that, everything sticks to them & are impossible to clean. I followed directions & oiled them beforehand. Also only used a medium heat. Wish I'd bought the non stick models.
