Does what it should.....
Makes a proper of no other ingredient than a tiny bit of water or milk/cream and the cheese you are melting.....making your sauce perfect for what you are trying to accomplish. I've used it to create dips, nachos, alfredo, and various other sauces where emulsification would break it down to a point where it couldn't be reheated or used again, or turned into a sloppy mess.

Good for Queso
Add a few teaspoons to some warm milk and add cheese, then heat further and whisk. The cheese will incorporate into the milk perfectly. Restaurants watch out, I'll never pay $6 for a 4oz bowl of queso again.

A little bit goes a long way
Want to make the best mac and cheese or cheese dip you've ever had? This is what you need. I didn't need such a large bag but I needed it quick and this one had the quickest shipping. Glad I got more than I needed because it has changed my relationship with cheese sauces.

Keeps Cheese from Clumping
Just a teaspoon or two will keep most types of cheese from "breaking" when melted. The addition of a bit of this stuff makes for creamy Mac n cheese and hot cheese dips. Doesn't add much, if anything, in the way of flavor (which is good).
