Great quality product for vegan cheese making
I'm just beginning to experiment with making vegan cheese. The recipe I used called for agar agar, but said carrageenan worked well, too. When I found this particular carrageenan and saw it was a Maine product, I gave it a try. (Supporting my neighbors! Win!) The carrageenan is a fine powder and dissolved perfectly in the cheese recipe. It set up well and produced a very firm and tasty block cheese. The first recipe I used it in was for smoked Gouda. I'm trying it next in a cheddar block. Very happy with the results so far and plan to purchase more as my cheese making progresses.

Great for making vegan cheese that is much like regular cheese
I used the kappa carrageenan this past Sunday. I made vegan mozzarella cheese. The recipe I used is on Pinterest and it named this product and was the reason I purchased this item. Guess what? I loved the cheese! I attribute the cheese-like qualities to this kappa carrageenan product! It was a lot of fun to make. I made a home made pizza and was able to shred and slice the vegan cheese 4 hours after making it! It tasted great from the moment all the ingredients came together and only gets better after a few days. Great fun, I plan to try this product for other cheese recipes, including the ones that call for agar-agar.

Did the trick!
I used this in some vegan cheese recipes I wanted to make. It worked perfectly in every recipe! I am a newbie at making vegan cheese. Everyone enjoyed the cheese so I am very happy!

High Quality
I bought this thinking I could make a gel on it, but I had to work with it for some time to learn how to create it. When it dries it is very hard, but if you strain out the solid chucks and then set, it allows for a more mailable gel. This is the highest quality Carrageen on the market due to its small and delicate grain size. Its quality is high.

For making vegan cheese
I have been a vegan for eight years and am taking a dive into making vegan cheeses, I am experimenting with both Kappa Carrageenan and agar agar. This has definitely made the cheese a bit more dense and firm than the agar agar but it's still not as firm as I was hoping for. It could be user error and I just need to experiment with it more, but I have been following the exact directions of recipes on line. It just may not be possible to make homemade cheese as dense as vegan store bought brands. However firmness aside, there is no funky flavor or anything that detracts from the flavor of the cheese. My cheddar and smoked gouda came out super yummy!

Great product
This is the second time purchasing this product. I got the smaller 2oz quantity in 2017 to try with the Gentle Chef non dairy evolution cheeses and they turned out amazing. When he released his new gluten free cookbook which makes more use of Kappa Carageenen I knew I needed a bigger quantity to have on hand to make the cheeses and also the GF ahimsa meat analogs. Definitely give it a try and highly recommend pairing it with his range of cheese! In the picture what you see are the Pepper jack, Brie and mozzarella di tuscano and also the GF pepperoni. These were a hit with both vegans and non vegans alike!!!

Great for making vegan cheeses
I use this product occasionally to make the vegan cheeses in the book "The Non-Dairy Formulary." This product is superior to agar-agar in how it performs as a thickening/gelatinizing agent. For the price, I believe it's a good investment if you really want to get into making your own nutmilks/vegan cheeses. The vegan mozzarella I can make with this is so absolutely amazing, I would daresay it is identical to its dairy-derived version in taste and texture, and only slightly different in how it melts. I will probably continue to purchase this product when I run out, but 14 oz will definitely last me quite a while.

Great for vegan gummies firms up perfectly very impressed
This product is absalutly perfect.. I have been trying to make vegan gummies and have not found anything that worked ..this stuff is perfect ...hardens fast has shine ..keep's its form ..trick is make sure you add your liquid to the powder and dry ingredients not the other way around ..I am so happy with outcome ..if you are looking to make vegan gummies you definatly need this product ..
