How many sashes should I use if i want to use one gallon of milk?  Also how may tablespoons should i use for one gallon of milk?

This is a little complicated if you are staring out w/1 gallon, you would need 4 packets.  However your first culture should be for one quart with one packet.  After your 1st batch, use 1 cup to 1 1/4 cup of the first batch to make subsequent 1 gallon batches.  Then you make a second batch  yogurt from the last batch, and then a third.  I have found 3 batches is optimal.  You can try a 4th, but it will be tangy.

This yogurt has a very good flavor.  if you order it, the company will send you additional directions, including how to freeze yogurt from the initial batch.

You'll note the the direction for the first batch required a much longer incubation time than subsequent batches.

Can you make the yogurt with 2% milk? If not, why not?

Please find a brief explanation below: The 2% milk contains less fat. During the fermentation, bacteria eat the lactose in the milk and created side product lactic acid thickens the solids(fats) in the milk and add the flavour. As the milk contains less fat - fewer solids will thicken. For this reason, you will be able to make a yoghurt, but the texture will be more liquid. Please note that traditionally the yoghurt(Bulgarian one) is made with a whole(full-fat milk). The full-fat plain yoghurt is perfectly balanced food and always will be like that if you consume it plain.

After making yogurt with this starter is it possible to use the yogurt as the starter to continue making more?

Yes.  I remade it a couple times from the existing yogurt and it was fine.  I think you can make it many more times, but I let mine go bad before making another batch. :(
