Wonderful for Gum Cocktail Syrup
I used this to make a clove and cinnamon flavored cocktail gum syrup and am very pleased. It made a thick pleasant syrup with only hints of the light spices that I briefly added. I will be ordering more for another pineapple Tiki inspired syrup as it is just the right amount and price. Highly recommended! A gum syrup adds a nice mouthfeel to just about any cocktail. Also I use it in place of egg whites in cocktails, as I don’t like using raw eggs.

Outstanding Simple Syrup
Bought my brother the Cocktail Codex and got him the stuff to make the Demerara Simple Syrup for the Old Fashioned. I also made him the simple syrup myself because it’s pretty time consuming. Used this gum Arabic powder and the syrup was so much more viscous than other simple syrups I’ve made before. The Old Fashioneds had a depth of flavor we never tasted before.

Great for gomme syrup
I bought this specifically to make gomme syrup for tea and such. Gum arabic allows you to create a supersaturated sugar solution that's sweeter than regular simple syrup but that won't crystalize. The sugar stays in solution due to the gum arabic.This seems to have no flavor (which is correct). All gum arabic is a bit expensive but it's indispensable for what it does. Probably will buy again if I decide I like gomme syrup.

Superior to non-hydrates gums
I had purchased this Modernist Pantry before, my first time using gum acacia, and it was running low. I ended up buying 4 or so different brands to see if I could find one that would be more cost competitive. I had no idea how difficult hydrating regular ones would be, with many sticky, clumpy messes. I typically mix it in to cold beverages by just dumping a teaspoon on the top and incorporating it with one of those handheld milk frothing wands. It also seems to have a greater effect for the same volume of gum than the others I tried, haven't measured if it's denser so I don't know if it actually uses less product, but one teaspoon goes farther.I'm still going to use the regular gums by hydrating them in hot water for larger projects where the time required to prepare them has a smaller effect on the total time. For anyone that wants to use a small amount fairly frequently, this gum saves tons of time and headaches.

You’re worth a minor indulgence.
Aracia gum seems like a luxury Item until you start using it. Like a little wax on your skies, it just makes life a little smoother (metaphorically speaking. Don’t waste arabic gum on your skies; it should be applied to something like a proper cocktail. )

This is legit, and makes great Gomme Syrup for cocktails - so why the low rating?
Because after buying two bags of this, I went to an Indian Super Market, and they sold the same size bag for roughly $3. This cost me $16 per bag. Erg. BUT, it makes great simple syrups for awesome cocktails, and I will gladly use it all.
