This particular herbal thyme mix comes from the area of Allepo in Syria. In Allepo, they mix their ground thyme leaves with sesame, cumin, fennel, anise, sumac, and a bit of salt. The mixture is slightly sour, salty, warming, aromatic, and less pungent than other mixes.
