A great product that cuts well above it's price
Just a fantastic knife. I use this pretty much every single day, and have done so for the past 6 years. I am not cheap when it comes to kitchen equipment, and have invested in plenty of higher end cookware over the years. I've tried more expensive knives and I keep coming back to this one. It keeps a great edge, sharpens quickly with any simple drag-type sharpener. The rubber handle grips well, regardless of what your hand has been touching. It's well weighted. Don't think I've ever cut myself with it. Just a really good knife. Don't let the low price fool you. It certainly doesn't look like a high end knife, but it's extremely functional, and I've never felt the need to baby it or worry about protecting it.

A Cut Above: Affordable Quality in Every Slice
As someone who enjoys spending time in the kitchen, having the right tools is crucial for a pleasant cooking experience. The Mercer Culinary M22608 Millennia 8-inch Chef's Knife has quickly become a favorite of mine due to its durability, sharpness, and affordability. Right out of the box, the sharpness of this knife was evident. It made quick work of chopping onions, mincing garlic, and slicing through vegetables and meats with ease. The high-carbon Japanese steel construction is truly a game-changer. It has stayed sharp through multiple uses over a few months, which is something I've struggled to find in other similarly priced knives. The quality construction doesn't just stop at the blade. The handle is ergonomically designed, providing a comfortable grip even during lengthy chopping sessions. The textured finger points are a nice touch, ensuring a firm, non-slip grip. I have a collection of knives, some of which are on the pricier side. However, I find myself reaching for this Mercer knife more often. It's become a reliable workhorse in my kitchen. I love the fact that it's a high-quality knife that doesn't break the bank. If ever needed, replacing it won't be a financial setback, although, with the way it's holding up, I don’t see a replacement happening anytime soon. Cleaning is also a breeze. A quick hand wash, a rinse, and it's ready for its next use. The manufacturer advises against dishwasher cleaning, which is a small trade-off for maintaining the knife's performance. In a market flooded with overpriced knives, the Mercer Millennia 8-inch Chef's Knife stands out as a valuable, high-quality option for both professional and home cooks. It's a solid knife that performs well, is comfortable to use, and has a price point that makes it a smart buy.

Great quality for a great price
As an older single male, I don’t really cook much and resort to more simple meal preparations. But lately I started to cook a little more. I used a cheap knife I had laying around and it just didn’t feel sharp anymore. This knife is slightly on the bigger side. I think a 6” blade might be more standard for people. But it’s still perfectly fine to use and not overwhelming in size. It’s pretty lightweight and handles great. Comfortable grip and a sharp blade make cutting and chopping easy. I’m pleasantly surprised at the quality for such a cheap price. Time will tell on longevity but the knife feels like it’ll last a long time. I was so pleased with this that I bought another Mercer paring knife for smaller cuts. From casual to hardcore cooks, I think these are extremely well made and serve its purpose at a bargain price.

Good knife for a reasonable price
This chef's knife is very comfortable to hold and cuts very well. I have a couple other more expensive knives but this by far is the one I use the most. Blade retains it sharpness for a reasonable time. I usually would sharpen it with a 1000 grit then a 6000 grit stone every two month. Would recommend.

A great knife, but a little bulky.
I have been using this knife for a year now, and can say that it is a wonderfully made kitchen tool. It cuts wonderfully, stays sharp, so basically it does its job well. My only complaint I have with this one is its size. An 8 inch knife is just a little bulky and impractical for me. If you are used to using knives of this size it might be just the thing for you, but if you are like me (not a chef), and are just looking for a kitchen knife, I would go with the Mercer 6 inch chef's knife. Both are good tools, but the 6 inch is much easier to handle.

Great knife!
Love my knife! I use this for everything, ranging from filleting chicken to cutting vegetables, fruits, and anything you can think of. Perfect size for larger hands and for cutting big things. Seems to be very high quality for the price. I've had this knife for a while, and there has been no rusting at all, even after washing it in the dishwasher. Highly recommend.

Excellent knife!
I bought this knife for my brother. He liked it so much I decided to order one for myself. It is well made, with a very sharp blade and sturdy handle that fit well in my senior hand. I love it.

Very Sharp, good edge retention and amazing grip and comfort
Crazy sharp out of the box and holds its edge well. Lightweight but easy to control, making it a solid workhorse for everyday prep. The handle is a standout—comfortable, grippy, and secure. It won’t slip unless you want it to. Not a fancy forged blade, but for the price, it punches above its weight.
