Does this pan work on induction cooktops?

yes. I have both the medium and large pans. I have an induction cooktop (thermador freedom series) and it does work on my cooktop.

What is the capacity or volume of this pan? Would it hold and fold about a cup of egg whites/egg and a half cup of wilted greens?

This particular (small) size tamagoyaki pan would not hold that volume of egg. Since you want only a very thin layer of egg cooking at one time for best results, this pan would probably only be good for less than half that amount. Especially if you want to add greens to it. I recommend you get the large capacity tamagoyaki pan if you prefer large volume egg dishes rolled with filling. I promise you will really like your finished egg dish! I hope this was helpful to you. is this plan completely flat on the bottom? I need no curve at all.

There is 5" x 6" of the bottom of the pan I'd say is pretty darn 'flat'. Then it turns up into a pretty tight angles (not quite 90°) to the top. Pretty sturdy pan, I must say also.
