how do these compare to the organge handle KastKing knives?  Is the Spartacus/white handle a premium/better product?

I have the orange handle one and the blue & white handled one I got for my Dad as a gift. 
The Orange handle one when placed in the sheath locks in and seemed better to me. The blue & white handled one does not lock in the sheath and is extremely loose in the sheath to where it could fall / slip out if you bend over. I’m afraid the blue & white handled one can cause injury if the sheath is on is fishing vest, pack or belt, so I told him to keep it in his tackle box. 
I like my orange handled one much better, I can have it on my belt, vest and or on my pack / tackle bag, it’s in the sheath locked & snug, hasn’t slipped or fallen out while hiking either. 
Both blades bend them same and filet a fish off the bone and skin like slicing through butter. We have used both knives for saltwater & freshwater fish, no signs of rust or tarnish of any kind, they both also cut through fish bones like ease for cut bait (as my Dad) has used his for that as well. We have filleted shark, reds, bass, speckled trout & rainbow trout with ease.

What is the difference between the 9” and the 9” strong?

The main difference is the 9" Stong has a better bench press and dead lift.

Just released july 2019. But how does the blade hold up to perch or walleye tough skin?

How do you get fish bits out of the solid sheath? The air hole looks rather small from the pictures.

Never an issue, lay the sheath aside and clean the fish. Wash all off and back together.
