This knife was purchased as a birthday present for my son who recently started work in a restaurant part of a well known chain.The 8" Kiritsuke knife arrived before the expected day of arrival, was well packaged and with no damage.The box containing the knife is of very high quality and upon opening presents the knife beautifully.The knife itself is an item of high quality, visually drawing, very sharp and sits in the hand naturally and confidently. The Damascus patterning does draw the eye without doubt. The handle is octagonal in nature but sits very well in the hand in a positive way and is unique in its patterning and colour which adds to the whole.This is an expensive knife for a special occasion so consider your options. Clearly part of the money you are paying has gone into the box the knife arrives in but overall worth it I believe and I would consider buying another Hajegato knife.

absolutely brilliant knife. i have used many kitchen knives but this has to be one of the best ones ive used to date, there is absolutely no resistance when cutting things like onions and actually makes the job very enjoyable. its a stunning looking knife with a very unique handle. im not entirely sure if it is real damascus but even if it isnt this is still one of the best knives i have ever used and would 100% recommend this to anyone. definitely worth the money!!

For all the amazing reviews this knife was exactly the same as others I have bought of aliexpress. From the steel feel on stones to handle design. It's pretty sharp out of the box but the edge bevels aren't amazing you'll definitely want to take it to a stone before using. It's a pretty good knife but very overpriced and it feels this company is praying on people's knife ignorance.

Absolutely love this knife. Great value for the quality of steel and craftsmanship. The handle is comfortable and overall very agile. Razor sharp edge and hard enough to withstand work in a busy kitchen. The packaging couldn’t have been better. Lovely magnetic box, a sleeve and a cloth.Highly recommend this company and I’ll be purchasing another soon!The only thing I would mention is maybe the option to choose and customise the handles instead of a hand chosen one at random. Other than that I look forward to seeing another one soon!Thank you Hajegato! 😊

Beautiful design and a very practical knife
I chef for a living so I'm constantly looking at/using various knives. Bought this little beauty as I've never seen a knife quite like it and so far it hasn't disappointed. It's a great all round knife it handles meat and veg prep with ease it also keeps its edge well ( I would recommend using a whetstone to sharpen it) it is the envy of the kitchen, I have caught the other chefs picking it up and taking photos of it 🤣

Soy chef y 10/10
Soy cocinero y lo uso a diario en una cocina de restaurante, si se me rompiese ni me pensaria comprarmelo otra vez, apenas lo he tenido que afilar un par de veces con una piedra, y dándole 2/3 veces a la semana con la chaira se mantiene genial. Aparte de la estetica lo pedi por probar el mango exagonal ya que viniendo de los redondos gordos que se me cansaba mucho la muñeca (por que tampoco tengo manos enormes) quería algo mas chico y esta forma me vino genial. Pesa poco, tiene sus pros y contras pero teniendo en cuenta que es de chef y le das mucho uso viene bien. Lo uso para picar todo tipo de cosas, filetear carne, incluso pelar cosas chicas como ajo, ya que el pico de filo donde el mango y el peso te lo permite bastante comodamente (cocina muchas veces con las prisas no nos podemos poner a cambiar de cuchillo). Tambien limpiar piezas de carne grandes ya que la oja es muy fina y corta suficiente para darle mucho angulo y no llevarte apenas carne aunque tampoco es el mejor para eso.

Trabajo como chef y este es uno de los cuchillos que más utilizo en mi día a día (4-5 horas diarias).El peso es ligero, el corte muy nítido y la retención del filo muy buena.Cuando llego vino afilado a un 80% (más que suficiente para la mayoría de usuarios) pero yo utilicé mi piedra shapton pro de 1000 para ganar nitidez.El acero vg10 es muy práctico al retener el filo 6-7 horas sin problema, ser inoxidable y fácil de volver a afilar.El mango de madera aguanta muy bien la humedad (lavar y secar al momento) y se adapta muy bien a la mano.PRECAUCIÓN: La forma del cuchillo es diferente a lo que estamos acostumbrados y al principio cuesta un poco acostumbrarse. Si buscas algo más “convencional” puedes optar por el modelo Santoku (también lo tengo y estoy muy contento) o el gyutoh.RESUMEN: Precio comedido para un cuchillo de calidad que aguantará un uso exigente.
