When using the bag to cook sous vide, how do you get the air out? Doubt displacement method would be effective here!

The large size one has a triangular cross sectional profile and will sit on the base of a pan, but so far I have found them all airtight. You can seal, then open one corner and squeeze out the air, then pop it back together and it should remain airtight, but I haven’t tried sous vide cooking in one of these yet, so I can’t say for sure.

Will steriliser solution damage the bag?

Can you marinate meat in these?

Answer: Most definitely yes. You can leave over night in the bag in a fridge to marinate. I leave meat at least 6 hours. Your bag of marinated food can then go directly from the fridge, into the oven to cook. I know you haven't asked, but a simple quick tip to make cleaning easier - turn the bag inside out.

Can these replace a lunch box to take to work? Cooked meals

Short answer is yes. I wouldn't put liquid in it. It's fine to store soup or sauce in the fridge but it can burst open in the bag. Also if you don't use it regularly you'll have to wash it before use - it attracts fat and dust and become slimy after just few days in storage (in the clean kitchen!)
