Dexter-Russell 12" Scalloped Slicer, S140-12SC-PCP, SANI-SAFE Series

This knife is great! Bought it right before July 4th and knew I would have to make a brisket to try it out. It worked perfectly. Hell it worked so good I might use it to trim my brisket next time.

Sharp, long, easy to grip. Perfect for BBQ like Brisket and Ribs, and can be useful for large loaves of bread. It's a foot long so it's hard to store but that's not really the *product's* fault in so far as you're buying something that size and should expect it to be exactly that long.

The perfect slicing knife for sourdough bread, brisket, or ever your thumb - as I experienced once! This is scalloped, not serrated, so cuts are super clean and effortless. When I sliced into my thumb and nail, it didn't even hurt because it was such a clean cut. I give this 1.5 thumbs up! Note: no actual thumbs were lost, just sliced a good bit.

When I smoked my first brisket ever last year, I didn't have a good knife to slice it with and ended up kind of destroying it during the slicing. That's why I ordered this knife. This thing is absolutely for slicing brisket. Super sharp. Nice grip. Slices through a thick crust seamlessly leaving a nice clean slice.

I like Dexter-Russell products. I have some knives that are over 30 years old and they still hold their edge. This 12" roast carving knife is from the top of the line SANI-SAFE series. Made in America out of special carbon steel alloy. Its worth the extra money. The SANI-SAFE product line is much better than their BASICS series that are made in China. This long thin blade with its scalloped edge makes cutting very thin slices of roast a breeze. My only minor criticism is that the blade is so thin that displays a bit more flex than I like. But that does not seem to affect the knife's functionality.

Best tool tool to cut foam in a straight line, divide cake sheats, and slicing artisanal bread loafs. The combination of length and seemingly everlasting sharpness. I used my first one for 8+ years before someone liked it so much that they disregarded the boundaries of personal property. I own a 10" Victorinox and 10" Henkel slicer but the 2 extra inches are surprisingly helpful.

It really is about the right tool for the job. Used this for slicing brisket and it was perfect for the job. Easy cleanup and a great price.
