Hi Chef wannabe,This is the only Steam/Convection Toaster Oven available from Cuisinart at this time.

What is the lowest setting of the oven? Can it be used to dehydrate food? Will a 13x9 baking dish fit?

The lowest default setting is 160 degrees; however on the steam function the temp can range from 100 degrees to 210 degrees. A 13x9 baking dish will fit inside the oven. We do not recommend using this to dehydrtate food.

Is there a way to adjust the end of cycle beeper. I cannot hear the beep.

Yes there is. This is from the manual online: You have the option of turning off the beeping sounds or making the beeps louder. To change the beep setting, press the +30s button and the Conv button simultaneously for two seconds. The number "1" (default setting) will display. To deactivate all beeps, turn the selector dial to 0 (zero), then press selector button to hold this setting. To change the beeps to a louder sound, turn the dial to "2", then press the button to hold this setting. If you unplug the oven, all beeps will go back to the default "1" setting.

Are the racks auto eject?

The racks are easy to put in or take out. They do not move when opening the door if that is what you mean.
