How long will this keep once it is open..

It will last about as long as any other food in the frig. You can freeze it. When you unthaw it you may have to add a little water to it for consistency. Taste just as good as when you opened the can.

How can I save any that is unheated and unused? I have the large can and two of us don't eat that much. Thank you for your assistance

I have also put mine in good air tight containers in the freezer. It keeps for a long time and not necessary to eat it all in a few weeks. The key is "air tight". I use the screw top containers and then put the container in a ziplock and freeze it.

How can I translate the expiration date on the top of the can because it's really long?

You might call the company? Otherwise, sorry... my large can is long gone so I can't help but.... the date doesn't matter to me since I, like so many other users, put the gravy in smaller (8 - 10 oz) jars and freeze. It gets used up pretty quick so no worries about expiration date. I think I purchase about 2 - 3 cans per year and it is just me and visiting family/friends who use it. It is soooo good.
