Are these knives lightweight and flimsy ??

They are lightweight..but they aren't flimsy. They are super sharp.

Can these knives be stored in a wood block?

When I use a block, I flip the knives upside down so it doesn't dull, ding, knick the blade for better protection of the blade. I have very limited counter space and our block was taking up too much room and I kept having to move it around when I was cooking & baking so I bought a magnetic strip that mounts to the wall to hold my blades but still within reach and LOVE IT!

Why did not sheaths with my steak knives?

Sheaths did come with the knives. I returned mine though. The color wore off after a few washings, actually right on my dish towel.
