Do any of the gold tones shimmer or sparkle in the light?

no not on our counter top we dont have alot of lighting so I had to say no but it looks great we love it

how hard is it to cover the edges if they are 90 degrees and not rounded?

first problem is it looks very fake save your money and buy the real thing but if you are doing a countertop in a rental it works ok but will need to be replaced after the renter moves out it tears easily but corners also look fake and they also come apart easily

Could it be put on the wall as a backsplash?

I applied this product to a smooth table surface. Looks really nice. I think it would work well as a backsplash as long as your applying to a smooth surface.

Hi ! to be honest, I dont think so. If you are talking about around your tub, it would not adhere very well because of the grout. But this is a great product! I installed it over my bar and over my bathroom sink, and so far, so good!
