These are little pearls made from a Japanese citrus fruit called Yuzu, somewhat like lemon, but a different taste. I used with fish dishes, shrimp, Alaskan king crab legs. Any place you want acidic " Wow " factor when you eat it. A rather large container, it goes a long way. You don't need much.

The answer will vary depending on the flavor, where the pearls are stored and at what temperature. The Yuzu, balsamic and lemon have longer shelf life due to the acid in the product. I generally refrigerate after opening and use common sense as to whether a product is inedible.

Do the pearls dissolve in liquid?

The flavor pearls will eventually dissolve in liquid. If it is a hot liquid like tea this will begin immediately. In a cocktail or something else cold or room temp they should remain intact for 15 minutes or so.
