How much dough is recommended on the 12x12 pan?

This is what I use: • 1½ C AP Flour • 1½ C King Arthur Italian Blend Flour or 00 flour • 3/4 Tbs Pizza Dough Flavor (mashed/finely grated Pecorino/Romano cheese, garlic, oregano, basil) • 1 Tsp Salt • 1 Tsp Yeast • 1 C Luke-warm Water • 1½ Tbs Olive Oil (plus 1½ Tbs to grease pan

What is the non stick coating made of, any harmful chemicals

It is a hard anodize with a water based mineral sealer. Eco-Friendly, non-toxic PTFE/PFOA- free release coating.

Any familiar with old forge style pizza? can i get a fried bottom on my crust with this?

What temperatures can this pan take? My wood fired pizza oven goes up to around 950* F.

All of the LloydPans PSTK coated products are safe to 700° F. That said, with food in the pan it will never get to this temp because the pan temp is never much higher than the food temp within. Food at 750° is burnt to a crisp. We have many commercial pizza restaurants using these pans in their wood-fired ovens with great success. With food on the pan there is not really a max temperature. As long as you remove the pan from the oven when the food is done(don't burn the food).Thank You, LloydPans
