which type of grout float works best hard or soft?

A soft float worked best for me. It made it easier to work the grout into the grout lines without make a giant mess. Make sure to wipe the access grout away and NOT let the grout dry completely before wiping. It will be next to impossible to remove once the grout has dried. It dries pretty quick too.

Can i use the unmodified thinset with cement board? i have a shower bench with kerdi but an area of wall tile i need to replace that has cement board.

This is grout, not thinset. Typically you don't used unmodified thinset with backer board. Only use unmodified thinset when manufacturer specs require it. I use modified thinset on backer board.
