It is packaged in some liquid that does have a slight smell to it, but all you need to do is run it under water for about a minute and it’s gone. It does obsorb the flavor of the sauces you put it in, so you do not get any other taste then the sauce you mix it with. The only thing I would suggest is boil it longer then the package suggests.. After 11 minutes of boiling it still had a slight crunch to the noodles, like a raw carrot has when it is just about fully cooked

**Q: Is this more al dente or is it pretty soft?**
A: Straight from the packaging, this product is al dente, but the longer you rinse or heat, the softer it gets.  While it is pretty taste neutral, there is a bit of the taste of the hearts of palm.  If you're a fan of al dente and aren't turned off by the natural taste of the vegetable, give it a quick rinse, and have your chosen sauce already warm;  then just a quick turn in the sauce over medium heat and you'll preserve that texture.  If you don't mind softer textured pasta, heat a little longer and slower.  I really like this product & hope you have good luck with it, too.

**Q: are the pouches shipped in an acid water like the cans --or are they drained noodles?**
A: They are shipped liked the cans, in an acid water to keep the product fresh and safe to consume.

**Q: Since i dobt see it mentioned, i assume this product is not organic, correct?**

I should preface this review by saying I'm a big fan of hearts of palm. I can eat them right out of a jar. So this product intrigued me from the start. And given realistic expectations, it did not disappoint. I created a tasty "pasta" dish using these noodles, some quality jarred tomato sauce, and vegan sausage. I rinsed the noodles well, but I did not soak them in milk (as they suggest to get rid of the palm taste). I like the palm taste and really, once you add other ingredients to your dish, the taste moves way to the background. As you can see from the photos, they are the shape of linguine, however, each piece is only about 4 inches long. They remain firm, giving something close to a pasta al dente feel in your mouth. And sauce sticks to them. I found them more tasty than say zucchini noodles, but not as tasty as lentil or garbanzo bean noodles. Hearts of palm are basically water, so if you want some real nutritional value you're going to have to add a protein and some good fats, like I did with the vegan sausage. In this context, they are an excellent wheat pasta substitute. They are however, expensive. Each package is maybe 2 servings if the pasta is not the main. For me, it was one big serving.
