When I bake in my Emile Henry cloche, I do not preheat it. I let the dough rise covered inside and score it before putting into the oven. I will do the same with this cloche. **Q: Baking bread in a Dutch oven causes the bottom of the loaf to be tough and chewy. Does the same thing happen with the bread oven or is it more even?** A: I made about 15 loaves in my Le Creuset bread oven over the past few months. The top and bottom’s crust are supposed to be crispy but not burnt.
