Thick or thin consistancy?** A: It is thin but more viscous than soy sauce, rather more of a mirin like consistency. It has mustard seeds in it, and you can clearly taste soy, mustard, wasabi and a a hit of rice wine and a bit of sweet. I use it to sauté almonds and green beans and to marinate tuna to sear. Regardless you will need to reduce it in order for it to be a viable sauce consistency. Great marinade or sushi dip as is, or used with water to perfume or flavor rice when preparing it. **Q: Does this have to be refrigrated after opening?** A: I always do and it lasts a long time.
