Thank you for your question and your interest in our products. In principle, ferritic stainless steel tends to be considered magnetic, while austenitic and martensitic steel tend to be non-magnetic. Whether stainless steel is magnetic or not has nothing to do with whether it is stainless or not. In other words, the quality of a stainless steel does not depend on its magnetic properties. Nor is the statement that stainless steel is never magnetic true. Experience shows, and we have tested an extremely large number of the most common types of knives on the market as part of the product development of the HORL 2, that chef's and kitchen knives are predominantly magnetic, provided they are not made of ceramic, and are therefore best sharpened with the HORL. **Q: Does it work on globals knives** A: Hello, Thank you for your message and your interest in our products. A sharpening angle between 10° and 15° is recommended for the Global knife - we sharpened the knife at an angle of 15°. Therefore I would recommend our HORL 2. If you want to achieve an even finer result, we recommend that you continue to sharpen the knife with the premium sharpening set or just with the #3000 whetstone.
