Starch is an alpha-glucan and a polysaccharide. Many medicinal mushroom products are actually made from the mycelium (mushroom root system) grown on grain and this grain ends up in the final product. Grain contains starch so this grain contributes to the polysaccharide number. Another example is the use of fillers like dextrose and maltodextrin. These are starches and will also spike the polysaccharide count. So as an example, a mushroom product could tout 70+% polysaccharide and be primarily fillers. This is why measuring polysaccharides is such a poor measurement of quality.
