## Description

It's long been known that liquid nigari makes the best tofu, with a refined texture and more balanced flavor profile compared to using crystals/flakes, gypsum or other alternatives. Unlike nigari crystals, which are made through a chemical process, our liquid nigari is a completely natural and sustainable product created as a consequence of harvesting gourmet sea salt at our saltworks in British Columbia. Our seawater is drawn from pristine shores, micro-filtered and boiled at high temperatures to ensure the highest purity. Made in small batches, it receives the same love and attention given to our award-winning salts. A little goes a long way due to its high concentration, with one bottle containing enough coagulant for approximately 100L of soy milk (depending on recipe). Our culinary team has created a tofu recipe using liquid nigari available on our website www.CanadianSeaSalt.com where you can also learn how liquid nigari can be used to coagulate delicious ricotta, paneer and other fresh cheeses. Just a drop improves the flavour and texture of your home ferments including sauerkraut and kimchi. We recently changed the packaging from glass to plastic to limit the risk of breakage during delivery.

I make 8 cups fresh soy milk, heat it to 78 degrees Celsius, gently stir in 2 tsp., cover, and wait for 15 mins. Perfect every time. PLEASE NOTE, do some research before leaving a negative review because you tried to use store bought soy milk. Nothing will work for you if you’re using commercial soy milk that contains anything other than soy beans and water, and maybe a little salt.
Review: Works great, just don't use their instructions - We decided to try making our own tofu when the only grocery store in town wasn't able to stock it for months. The first time I made it, I used the directions from the website post Killer Tofu with Andrea Nguyen. It worked out perfectly, but it's a bit fussy with how you add the coagulant. The second time, we decided to go with the instructions that come with this nigari - it did not work out. The curds were teensy weensy and the tofu was more like a gritty paste than tofu. Lesson learned - go with the fuss. Also - if you use a sieve to press the tofu, like we did, make sure that the weight you use has a narrow enough circumference that as it presses down, it won't get stopped by the narrowing curve of the sieve. We forgot that, and our tofu couldn't get pressed as much as we wanted because the weight could not keep going down.

**Q: Does this product require refrigeration after opening? Thanks.**
A: This is a shelf stable product that does not require refrigeration after opening. We recommend storing it out of direct sunlight at room temperature.

**Q: From what country does the seawater come?**
A: The seawater is sourced right here on beautiful Vancouver Island where our sea salt harvestry is located. We have a two kilometer stretch of private oceanfront from which we draw the water at high tide. The water is then filtered and boiled at high temperatures to ensure purity.

**Q: how many gram Nigari to mix with soymilk for tofu pudding?**
A: For silken tofu we have this great recipe from a customer who shared with us:

"I recently created a very successful silk tofu pudding using your nigari. The recipe is very simple and I was hoping to share it with you.
Ingredients:
2 cups of soy milk (unsweetened)
1 teaspoon of nigari

Equipment:
steamer
2 bowls

Directions:

Mix the nigari and the soy milk together.
Pour it into a container that can be put into the steamer. I divided the entire mixture into two bowls.
Cover the bowls with aluminum foil. This is to prevent the condensation from forming bumpy surfaces on the tofu pudding.
Steam it on low heat for about 9 minutes. Stove temperatures may vary. I used an electric stove (with a max setting of 2000 and a min setting of 200), and used heat setting 600.
Add sugar to taste. The traditional sugar to use with tofu pudding is red powdered sugar. But any sugar would do. I made a sugar syrup with muscovado sugar instead of adding granulated or powdered sugar.
Note:
I used store bought soy milk which was unsweetened. I bought the kind that had to be refrigerated."

**Q: Do you need to dilute this in water to make tofu?**
A: Hi! It is not necessary to dilute liquid nigari with water but a couple of recipes that have given our customers great results do recommend it. Check out the 'Killer Tofu Recipe' online by Andrea Nguyen. Our understanding is that the amount and concentration you use also depends on your desired firmness.
